Delicious Zucchini Pancakes!!!

This idea is a great option to introduce a little more vegetables into our diet in a fun way!!!! Additionally, by using kefir instead of milk, we are giving your microflora a boost of probiotics!!

TIP from mom to mom: Invite your children to scratch the zucchini, it will help them relate to it and they will be encouraged to try it!!!

Let's do it

1/4 cup oat flakes
1/4 cup almond flour
1/4 cup natural Marusia kefir
1 egg
1 splash vanilla
1/2 tsp cinnamon
1/4 tsp baking powder
1/4 tsp baking soda
1 splash of apple cider vinegar
1 small grated zucchini
1/2 tbsp monk fruit
